LEMON PRALINE
Ingredients:
100 gLemon
10 gSugar
10 gLemon zest
25 gHoney
30 gGlucose syrup
240 gMilk Chocolate 34% - BARIMA ARTISANAL (code CHL35XXC3)
30 gButter
Preparation:
Mix the lemon and sugar in a blender. Strain the mixture and heat it to 80°C with the lemon zest, honey and glucose syrup. Pour the mixture into the chocolate and blend thoroughly. Cool to 35°C and add the soft butter.
