Santa’s Window
A dessert which attracts attention with its unique design. It is a festive red shortcrust cookie, filled with a light as a cloud mousse, which captivates with its sophisticated shape. The centrepiece of the dessert features a chocolate 3D Santa Claus and a refined Moon ball. Every detail has been meticulously crafted to evoke a magical atmosphere and elicit a smile. No one will be able to resist its charm.

Recipe
Dissolve the Marshmallow in 50g of milk and 50g of cream in a microwave. Set aside to cool for 5 minutes. Add the remaining milk, cream and yoghurt and blend it all together. Pour the half of mousse into the silicone mould. Sprinkle it with Barbara Decor gingerbread blossoms (code 3394883) and then fill the mould with remaining mousse and freeze. Coat the frozen mousses with white Velly Spray Barima Artisanal (code FP044723)
Mix the flour with butter. Add egg yolks, icing sugar and colorant. Knead to a dough texture. Roll out the dough to 5 mm thickness and cut out the discs. Bake them between two perforated silicone mats at 180°C for approximately 15 minutes.
